Master Brewers Bill Wesselink and Hagen Dost met in Munich while attending brew school at Doemens Academy and returned to Chicago to start a brewery inspired by the small, family-operated breweries they visited while abroad.
Focusing on continental European styles and traditional methods, each Dovetail beer is handcrafted to play on all the senses. We use imported European malt and hops; historic water profiles; decoction mashing; a coolship; open-fermentation; and patient maturation in horizontal lager tanks to ensure that the Dovetail beer in your glass has great flavor, body, aroma and aftertaste.
After opening our doors in June 2016, Dovetail was named one of Beer Advocate’s 34 Best New Breweries in the US.
